Tomato Beef Noodle Soup with Cilantro
A comforting bowl of broad, silky wheat noodles in a tangy tomato and star anise broth, topped with tender slices of beef and a big handful of fresh cilantro. The soup is savory, slightly sweet and gently spiced, perfect for chilly nights or a slow weekend lunch.

Method 6 steps

Toss the beef with cornstarch and 1 tbsp soy sauce and set aside for 10 minutes.

Heat the oil in a large pot over medium heat and cook the garlic and ginger for 1 minute. Add the tomatoes and tomato paste and cook for 8 to 10 minutes, mashing, until the tomatoes collapse into a thick sauce.

Add the broth, star anise, remaining soy sauce and sugar. Simmer for 20 minutes, then remove the ginger and star anise.

Meanwhile, cook the noodles in a separate pot of boiling water according to the package, until tender but still springy. Drain and divide among bowls.

Bring the broth to a rolling simmer, drop in the beef slices and poach for 1 to 2 minutes, just until no longer pink.

Ladle the broth and beef over the noodles and top with a generous pile of cilantro.
