Japchae Glass Noodles with Beef
Springy sweet potato glass noodles are tossed with marinated beef strips, snow peas, carrot batons, spinach, red pepper, mushrooms and ribbons of golden egg, all dressed in sesame oil and soy. Served warm or at room temperature, it is a colorful celebration dish that travels well.

Method 6 steps

Marinate the beef in 1 tbsp soy sauce, 1 tsp sugar, 1 tsp sesame oil and the garlic for 15 minutes.

Cook the noodles in boiling water for 6 to 7 minutes until chewy and translucent. Drain, rinse, snip into shorter lengths and toss with 1 tbsp sesame oil.

Cook the beaten eggs in a lightly oiled nonstick pan as a thin sheet over low heat, about 1 minute per side. Roll up and slice into thin ribbons.

In a hot oiled skillet, stir-fry the carrot, snow peas, pepper and mushrooms separately for 1 to 2 minutes each so they stay crisp and bright. Wilt the spinach for 30 seconds.

Stir-fry the beef over high heat for 2 to 3 minutes until browned.

Combine the noodles, vegetables and beef in a large bowl with the remaining soy sauce, sugar and sesame oil. Toss by hand, then top with egg ribbons and sesame seeds.
