Oven-Baked Meatballs with Melted Cheese

Juicy beef and lamb meatballs bake in a clay dish until browned, then disappear under a blanket of bubbling white cheese. Blistered tomatoes and a long roasted green pepper soften alongside, and the pan juices mingle with the cheese into a savory sauce that begs for crusty bread.

Method 5 steps

  1. Heat the oven to 400 F. Mix the beef, lamb, onion, garlic, breadcrumbs, egg, cumin, paprika, 1 tsp salt and pepper until tacky, without overworking.

  2. Shape into 8 large balls, about 2 1/2 inches wide, and place them in an oiled clay or ceramic baking dish.

  3. Tuck the tomato halves and green peppers around the meatballs and drizzle everything with olive oil.

  4. Bake for 25 minutes, until the meatballs are browned and the peppers begin to wrinkle and blister.

  5. Pile the cheese over the meatballs and bake 8 to 10 minutes more, until melted, bubbling and spotted golden. Rest 5 minutes before serving.
