Oven-Baked Meatballs with Melted Cheese
Juicy beef and lamb meatballs bake in a clay dish until browned, then disappear under a blanket of bubbling white cheese. Blistered tomatoes and a long roasted green pepper soften alongside, and the pan juices mingle with the cheese into a savory sauce that begs for crusty bread.

-
Heat the oven to 400 F. Mix the beef, lamb, onion, garlic, breadcrumbs, egg, cumin, paprika, 1 tsp salt and pepper until tacky, without overworking.
-
Shape into 8 large balls, about 2 1/2 inches wide, and place them in an oiled clay or ceramic baking dish.
-
Tuck the tomato halves and green peppers around the meatballs and drizzle everything with olive oil.
-
Bake for 25 minutes, until the meatballs are browned and the peppers begin to wrinkle and blister.
-
Pile the cheese over the meatballs and bake 8 to 10 minutes more, until melted, bubbling and spotted golden. Rest 5 minutes before serving.
