Soy-Glazed Beef with Onion and Carrot Slivers
Thin slices of well-marbled beef are quick-seared and glazed with soy, mirin, sake and ginger until shiny and tender. A crisp tangle of raw onion and carrot slivers on top adds crunch and sharpness against the sweet, savory sauce pooling underneath. Great with rice and cold beer.

Soak the onion and carrot slivers in ice water for 10 minutes to crisp them, then drain well.

Stir together the soy sauce, mirin, sake, sugar, ginger and garlic.

Heat the oil in a large skillet over high heat. Lay in the beef slices in one layer and sear for about 45 seconds per side until browned.

Pour in the sauce and toss for 1 to 2 minutes, until it bubbles down into a glossy glaze that clings to the meat.

Arrange the beef on a plate with the pan sauce, pile the onion and carrot on top and sprinkle with sesame seeds.
