Skillet Beef Tips with Peppers and Carrots
Well-browned cubes of sirloin toss with diced green bell pepper, sweet carrot and onion in a garlicky butter pan sauce. It is a colorful, protein-packed dinner in under half an hour, lovely spooned over rice, stuffed into warm pitas or eaten straight from the skillet.

Pat the beef dry and season with salt, pepper and paprika.

Heat the olive oil in a large stainless skillet over high heat until shimmering. Sear the beef in a single layer for 2 minutes per side until a brown crust forms, then transfer to a plate.

Lower the heat to medium, add the butter, carrots and onion and cook for 5 minutes until the carrots begin to soften.

Add the green peppers and garlic and cook 2 to 3 minutes more, until the peppers are bright and just tender.

Return the beef and its juices with the Worcestershire sauce and toss for 1 minute until glossy and heated through. Adjust the seasoning and serve.
