Skillet Beef Tips with Peppers and Carrots

Well-browned cubes of sirloin toss with diced green bell pepper, sweet carrot and onion in a garlicky butter pan sauce. It is a colorful, protein-packed dinner in under half an hour, lovely spooned over rice, stuffed into warm pitas or eaten straight from the skillet.

Method 5 steps

  1. Pat the beef dry and season with salt, pepper and paprika.

  2. Heat the olive oil in a large stainless skillet over high heat until shimmering. Sear the beef in a single layer for 2 minutes per side until a brown crust forms, then transfer to a plate.

  3. Lower the heat to medium, add the butter, carrots and onion and cook for 5 minutes until the carrots begin to soften.

  4. Add the green peppers and garlic and cook 2 to 3 minutes more, until the peppers are bright and just tender.

  5. Return the beef and its juices with the Worcestershire sauce and toss for 1 minute until glossy and heated through. Adjust the seasoning and serve.
