Walnut-Crusted Banana Bread with Fresh Slices

Very ripe bananas and brown sugar make a dense, fragrant loaf with a golden crust covered in chopped walnuts. Thick slices fall apart just enough, and a few fresh banana rounds on the side echo the flavor. Toast a slice with butter for breakfast, or wrap it up for a sturdy lunchbox snack.

Method 7 steps

  1. Heat the oven to 350 F and line a 9 by 5-inch loaf pan with parchment.

  2. Mash the bananas until mostly smooth, then whisk in the melted butter, brown sugar, eggs and vanilla.

  3. Whisk the flour, baking soda, cinnamon and salt, then fold into the banana mixture until no dry streaks remain.

  4. Fold in half the walnuts, scrape into the pan and scatter the rest thickly over the top.

  5. Bake 55 to 65 minutes, tenting with foil after 40 minutes, until a skewer in the center comes out with only moist crumbs.

  6. Cool 15 minutes in the pan, lift out and cool on a rack at least 30 minutes.

  7. Cut into thick slices and serve with rounds of fresh banana.
