Tomato Basil Bruschetta with Black Olive Rings

Crunchy toasted bread rubbed with garlic carries a juicy heap of diced tomatoes, minced garlic and olive oil, crowned with a whole basil leaf and a slice of black olive. The salty olive rings add a briny bite that makes these ideal for aperitivo hour or a summer patio spread.

Method 6 steps

  1. Heat the oven broiler or a grill pan to high. Brush the bread slices lightly with 2 tbsp olive oil.

  2. Toast the bread 2 to 3 minutes per side until golden at the edges but still slightly soft in the center.

  3. While still warm, rub one side of each slice with the cut face of the halved garlic clove.

  4. In a bowl, combine the diced tomatoes, minced garlic, chopped basil, remaining olive oil, vinegar, salt and pepper. Let stand 10 minutes so the tomatoes release their juices.

  5. Spoon the tomato mixture onto the toasts with a slotted spoon, leaving most of the liquid behind so the bread stays crisp.

  6. Top each slice with a whole basil leaf and a black olive ring, then serve right away on a board.
