Tomato Basil Bruschetta with Black Olive Rings
Crunchy toasted bread rubbed with garlic carries a juicy heap of diced tomatoes, minced garlic and olive oil, crowned with a whole basil leaf and a slice of black olive. The salty olive rings add a briny bite that makes these ideal for aperitivo hour or a summer patio spread.

-
Heat the oven broiler or a grill pan to high. Brush the bread slices lightly with 2 tbsp olive oil.
-
Toast the bread 2 to 3 minutes per side until golden at the edges but still slightly soft in the center.
-
While still warm, rub one side of each slice with the cut face of the halved garlic clove.
-
In a bowl, combine the diced tomatoes, minced garlic, chopped basil, remaining olive oil, vinegar, salt and pepper. Let stand 10 minutes so the tomatoes release their juices.
-
Spoon the tomato mixture onto the toasts with a slotted spoon, leaving most of the liquid behind so the bread stays crisp.
-
Top each slice with a whole basil leaf and a black olive ring, then serve right away on a board.
