Pico de Gallo and Green Herb Salsa Duo

Two contrasting salsas share the table here: a crisp, chunky pico de gallo of tomato, onion and cilantro, and a vivid green blend of herbs, jalapeno and lime with a loose, spoonable texture. Offer both with tacos, grilled fish or a basket of chips and let everyone mix and match.

Method 5 steps

  1. For the pico de gallo, combine the tomatoes, half the onion, the minced jalapeno and 3 tbsp chopped cilantro in a bowl.

  2. Season with half the lime juice and 1/2 tsp salt. Toss and let stand 10 minutes so the flavors meld.

  3. For the green salsa, add the remaining cilantro, parsley, chopped jalapeno, garlic and remaining onion to a blender.

  4. Pour in the olive oil, remaining lime juice and salt, then pulse until finely chopped but not completely smooth, scraping down as needed.

  5. Taste both salsas and adjust with salt or lime. Serve side by side in small bowls with a spoon in the green salsa.
