Tofu and Wakame Miso Soup

A quick dashi of kombu and bonito flakes gives this everyday miso soup its clean, smoky backbone, while silken tofu cubes, silky wakame and sliced scallions keep it simple. It is the natural partner to rice and a bento lunch, and once you have made dashi from scratch you will never go back to powder.
