Bright Broccoli Cream Soup with Sesame Breadstick

Quickly simmered broccoli and a single potato blend into an emerald soup with a gentle, sweet flavor and no stringy bits. A dollop of creme fraiche, a tiny blanched floret and fresh basil top each bowl, with a sesame breadstick for crunch. It takes under thirty minutes and suits both weeknights and elegant starters.

Method 5 steps

  1. Melt the butter in a pot over medium heat and cook the onion for 5 minutes until soft.

  2. Add the potato and stock, bring to a boil and simmer 8 minutes.

  3. Add the broccoli and simmer uncovered 5 to 6 minutes until a knife slides through the stems but the color is still bright.

  4. Blend until silky, season with salt and pepper, and blanch the reserved florets for 2 minutes.

  5. Ladle into wide bowls, add a spoon of creme fraiche, a floret and a basil sprig, and lay a breadstick across the rim.
