Stovetop White Cheddar Macaroni

No oven and no fuss, just elbow macaroni stirred into a velvety white cheddar sauce that stays creamy right down to the last forkful. A pinch of mustard powder sharpens the cheese flavor, and a handful of shredded orange cheddar on top melts slowly into the pale, glossy noodles.

Method 6 steps

  1. Cook the macaroni in salted boiling water until just al dente, then drain and set aside.

  2. In the same pot, melt the butter over medium heat and whisk in the flour. Cook 1 to 2 minutes, whisking, until it smells toasty but stays pale.

  3. Gradually whisk in the warm milk and simmer 3 to 4 minutes until the sauce thickens enough to coat a spoon.

  4. Take the pot off the heat and stir in the white cheddar a handful at a time until smooth. Season with mustard powder, garlic powder, salt and pepper.

  5. Fold in the macaroni and warm over low heat for 1 minute, loosening with a splash of milk if needed.

  6. Spoon into bowls and scatter the orange cheddar over the top.
