Smoky Paprika Grilled Corn on the Cob

Sweet summer corn is brushed with smoked paprika butter and grilled until the kernels blister and caramelize at the tips. The butter melts into every row, leaving a rusty, savory glaze that tastes like the best backyard cookout. Serve alongside burgers, ribs or grilled chicken.

Method 5 steps

  1. Heat a grill to medium-high, about 450 F, and oil the grates.

  2. Mash the butter with the smoked paprika, garlic powder and half the salt.

  3. Rub the corn lightly with oil and grill 10 to 12 minutes, turning every 2 to 3 minutes, until the kernels are golden with scattered charred spots.

  4. Brush the hot cobs generously with the paprika butter and grill 1 more minute per side so the butter sizzles into the kernels.

  5. Sprinkle with the remaining salt and serve with lime wedges.
