Seared Beef Pad Thai with Peanuts on the Side

Thinly sliced beef gets a quick, hard sear before joining rice noodles, egg and a sticky tamarind sauce. Serving the crushed peanuts, chili powder and lime alongside lets everyone season their own plate. The result is smoky and savory, with extra crunch from raw bean sprouts and a few carrot slices.

Method 7 steps

  1. Soak the noodles in warm water for 25 to 30 minutes until bendy, then drain. Toss the beef with the soy sauce.

  2. Warm the tamarind, fish sauce and palm sugar together until smooth.

  3. Heat 1 tablespoon oil in a wok until smoking. Lay in the beef in one layer, sear 1 minute without moving, flip for 30 seconds and remove.

  4. Add the remaining oil and the carrot for 1 minute, then the noodles and a splash of water. Toss until softened.

  5. Pour in the sauce and toss over high heat until the noodles absorb it and look glossy, about 2 minutes.

  6. Scramble the eggs in a cleared space in the wok, then fold through with half the sprouts, the scallions and the beef.

  7. Plate with the remaining sprouts, a mound of peanuts, a small pile of chili powder and the lime.
