Ruby Beet, Carrot and Lemon Juice

Earthy beets, sweet carrots and sharp lemon come together in a striking ruby juice with a clean, refreshing finish. A green apple softens the beet flavor for newcomers. Pour it into tall glasses with a lemon wheel on the rim for a bold, energizing drink at brunch or after a workout.

Method 5 steps

  1. Wear gloves or work on a board you do not mind staining, and cut the beets into pieces that fit your juicer chute.

  2. Alternate beets, carrots, apple, peeled lemon and ginger through the juicer so the harder vegetables push the softer fruit through.

  3. Without a juicer, blend everything with the cold water on high for 90 seconds, then strain through a nut milk bag, squeezing hard.

  4. Stir the juice well, since beet juice tends to settle, and skim off any thick foam.

  5. Pour over a few ice cubes in tall glasses, cut a slit in each lemon wheel and slide it onto the rim. Drink right away for the brightest flavor.
