Paper Cone Churros with Chocolate Dip

Long, ridged churros fry up crackly on the outside and tender inside, then get rolled through cinnamon sugar and bundled into a parchment cone. A small bowl of thick, glossy chocolate sauce waits alongside for dunking. It is a street-fair favorite that is surprisingly simple to pull off at home.

Method 6 steps

  1. Bring the water, butter, brown sugar and salt to a boil, add the flour all at once and stir hard for 1 minute until a smooth ball pulls away from the pan.

  2. Cool the dough for 5 minutes, then beat in the egg until glossy and pipeable. Spoon into a piping bag fitted with a large open star tip.

  3. Heat the oil to 360 F. Pipe 6-inch lengths straight into the oil, snipping with scissors, and fry 2 to 3 minutes per side until deep golden brown.

  4. Drain on a rack for 30 seconds, then roll in the cinnamon and sugar mixed together.

  5. For the dip, heat the cream until steaming, pour over the chocolate, wait 2 minutes and stir until smooth and glossy.

  6. Stand the churros upright in a parchment cone and serve warm with the chocolate dip.
