Inspired by Turkish firin sutlac, this silky milk pudding is thickened with rice flour, poured into clay pots and slipped under a hot broiler until the tops blister in dark caramel spots. Toasted chopped hazelnuts and a dusting of pistachio add crunch. Serve chilled for the best contrast.
