Home-Style Mutton Curry with Naan
Bone-in mutton simmers slowly with browned onions, yogurt, ginger, garlic and whole spices until the gravy turns rich and silky and the meat is spoon-soft. Serve it the way it is loved at home, with warm nigella-flecked naan, steamed rice and crisp rings of raw red onion on the side.

Method 6 steps

Marinate the mutton with yogurt, ginger garlic paste, turmeric and 1 tsp salt for at least 30 minutes.

Heat the oil in a heavy pot and fry the bay leaves and black cardamom for 30 seconds. Add the sliced onions and cook over medium heat for 15 minutes, until deep golden brown.

Add the mutton with its marinade and cook over high heat for 10 minutes, stirring, until the meat browns and the oil starts to separate.

Stir in the coriander and chili powder for 1 minute, then add 3 cups hot water. Cover and simmer on low for 1 1/4 to 1 1/2 hours, until the meat is tender and the gravy is thick and glossy.

Stir in the garam masala, adjust the salt and simmer uncovered for 5 minutes.

Garnish with cilantro and serve with warm naan, rice and raw red onion rings.
