Ground Beef Nachos with Queso and Jalapenos

Method 5 steps

Brown the ground beef in a skillet over medium-high heat for 6 minutes, breaking it into crumbles. Stir in taco seasoning and 2 tbsp water and simmer 2 minutes.

In a small saucepan melt the butter, whisk in the flour and cook 1 minute. Whisk in the milk and simmer 2 minutes until thickened.

Remove from heat and stir in the cheddar and paprika until the sauce is smooth and glossy.

Spread the chips on a paper-lined board or platter, spoon over the beef and pour the cheese sauce across the top.

Scatter tomato, jalapenos and cotija over the nachos and serve immediately.
