Extra-Crisp Oven Sweet Potato Fries

Long, skinny sweet potato fries soak in cold water, get a light dusting of cornstarch and bake on a screaming hot sheet until they turn deep orange with crackly tips. Sweet, salty and crunchy without a deep fryer, they are an easy upgrade for burger night.

Method 6 steps

  1. Soak the sweet potato sticks in cold water for 30 minutes to remove surface starch, then drain and dry thoroughly with towels.

  2. Place two baking sheets in the oven and heat to 450 F.

  3. Toss the sticks with cornstarch in a large bag until lightly coated, then add the oil, paprika and garlic powder and toss again.

  4. Spread the fries on the hot sheets in a single layer with space between them.

  5. Bake 15 minutes, flip with a thin spatula, swap the sheets between racks and bake 10 to 15 minutes more until the tips are dark and the fries sound crisp when tapped.

  6. Toss with salt immediately and pile into a parchment-lined bowl to serve.
