Wonton-Wrapper Samosas with Cilantro

Thin wonton sheets make a fast shortcut to samosas with an ultra crisp, blistered shell. Folded around spiced potato and onion, they fry in about three minutes and arrive at the table tangled with fresh cilantro sprigs and a small bowl of sweet chili sauce for dipping.

Method 4 steps

  1. Cook the onion in 1 tbsp oil for 5 minutes until soft, stir in curry powder and chili flakes for 30 seconds, then fold into the mashed potatoes with chopped cilantro and salt.

  2. Spoon a heaping teaspoon of filling onto each wrapper, wet the edges and fold diagonally into a triangle, pressing firmly.

  3. Heat 3 cups oil to 360 F. Fry the samosas in batches for 2 to 3 minutes, flipping once, until deeply golden and covered in bubbles.

  4. Drain on paper towels and pile onto a serving dish with the cilantro sprigs tucked around and the sweet chili sauce on the side.
