Watermelon and Feta with Mint and Balsamic Glaze
Chilled cubes of watermelon and creamy feta are stacked inside a dark swirl of balsamic glaze, then finished with mint, basil ribbons and a dusting of crushed freeze-dried raspberries. Sweet, salty and tangy all at once, this is a refreshing summer starter that takes minutes to assemble.

-
Pat the watermelon cubes dry on paper towels so the juice does not dilute the glaze on the plate.
-
Use a spoon to draw a loose oval of balsamic glaze on each chilled plate.
-
Pile the watermelon and feta cubes inside the glaze ring, mixing them so both colors show.
-
Drizzle with the olive oil and a little more glaze, then scatter over the basil ribbons and torn mint.
-
Sprinkle the crushed raspberries around the edges, add a mint sprig and finish with cracked pepper. Serve at once.
