Watermelon and Feta with Mint and Balsamic Glaze

Chilled cubes of watermelon and creamy feta are stacked inside a dark swirl of balsamic glaze, then finished with mint, basil ribbons and a dusting of crushed freeze-dried raspberries. Sweet, salty and tangy all at once, this is a refreshing summer starter that takes minutes to assemble.

Method 5 steps

  1. Pat the watermelon cubes dry on paper towels so the juice does not dilute the glaze on the plate.

  2. Use a spoon to draw a loose oval of balsamic glaze on each chilled plate.

  3. Pile the watermelon and feta cubes inside the glaze ring, mixing them so both colors show.

  4. Drizzle with the olive oil and a little more glaze, then scatter over the basil ribbons and torn mint.

  5. Sprinkle the crushed raspberries around the edges, add a mint sprig and finish with cracked pepper. Serve at once.
