Village-Style Greek Salad with Feta Cubes

Chunky cucumber, ripe tomato, shredded lettuce and black olives are tossed with oregano vinaigrette, then heaped with cubes of briny feta and rings of red onion. It is the simple taverna bowl that makes a light lunch alongside crusty bread or a lively side for grilled lamb.

Method 5 steps

  1. Soak the onion rings in cold water for 10 minutes to soften their bite, then drain and pat dry.

  2. Whisk the olive oil, vinegar, oregano, a pinch of salt and plenty of black pepper in a large bowl.

  3. Add the lettuce, cucumber, tomatoes and olives and toss gently to coat.

  4. Transfer to serving bowls, pile the feta cubes on top and finish with the onion rings.

  5. Sprinkle with a little more oregano and serve right away.
