Vanilla Cream Martinis with Raspberry Coulis

Two-toned and stylish, these martini glasses hold a set vanilla cream made from mascarpone and whipped cream, capped with a thick, tart raspberry coulis. Each spoonful cuts through bright fruit into cool, mellow cream. Nothing is baked, so it comes together quickly for an easy but elegant date-night dessert.

Method 6 steps

  1. Simmer the raspberries, granulated sugar and lemon juice for 5 minutes until broken down. Stir the cornstarch into 1 tbsp water, add and cook 1 minute until thick.

  2. Press through a sieve to remove seeds and cool completely.

  3. Beat the mascarpone, cream, powdered sugar and vanilla on medium speed until thick and holding soft peaks, about 2 minutes.

  4. Spoon or pipe the cream into four martini glasses, filling them about two thirds full, and tap to level.

  5. Spoon a thick layer of cooled coulis over the top, spreading it to the rim.

  6. Chill for at least 1 hour before serving.
