Silky Dark Chocolate Mousse with Pomegranate

Deep, bittersweet and velvety, this dark chocolate mousse is spooned into short glasses in loose swirls, then scattered with jewel-like pomegranate seeds and chocolate shavings. Each tart, juicy seed pops against the dense chocolate, keeping every spoonful lively. It sets in about two hours and needs no gelatin.

Method 6 steps

  1. Melt the chocolate and butter over barely simmering water, stir until glossy and cool for 5 minutes.

  2. Whisk the egg yolks one at a time into the chocolate; it will thicken and look glossy.

  3. Whip the cream to soft peaks. In a clean bowl, beat the whites with the salt until foamy, add 2 tbsp sugar and beat to medium peaks.

  4. Stir the remaining sugar into the whipped cream, fold it into the chocolate, then fold in the whites in two additions until just combined.

  5. Spoon the mousse into four glasses, swirling the tops with the back of a spoon, and chill for at least 2 hours until set.

  6. Scatter pomegranate seeds and chocolate shavings over each mousse just before serving.
