Sticky Glazed Baby Back Ribs and Fries

A full rack of oven-braised baby back ribs gets a sticky, lacquered barbecue glaze under the broiler, then lands on the plate with a bowl of hot fries and buttery mixed vegetables. Fork-tender without a smoker, it is steakhouse-style comfort that anyone can manage on a weeknight.

Method 5 steps

  1. Mix the sugar, paprika, salt and garlic powder and rub it over both sides of the ribs.

  2. Wrap the rack tightly in foil and bake on a sheet pan at 275 F for 2 1/2 hours, until the meat pulls back from the bones.

  3. Stir the barbecue sauce with the honey. Unwrap the ribs, brush thickly with sauce and broil 4 inches from the heat for 3 to 5 minutes, brushing again once, until bubbling and sticky.

  4. Meanwhile cook the fries according to their type until golden and crisp, and steam the vegetables for 5 minutes, then toss with butter and salt.

  5. Lay the whole rack on a plate with the fries in a bowl and the vegetables alongside.
