Pork Schnitzel with Parsley Potatoes and Green Sauce

A thin, crisp pork schnitzel shares the plate with crunchy pan-roasted potato cubes tossed in parsley and a cool, tangy green herb sauce inspired by Frankfurt's famous grune sosse. A halved boiled egg sits on top, adding richness to every bite of this hearty German pub supper.

Method 5 steps

  1. Blend the herbs with the sour cream, yogurt and a pinch of salt until smooth and bright green. Chill.

  2. Fry the parboiled potatoes in 2 tbsp oil over medium-high heat for 15 minutes, turning occasionally, until golden on all sides. Toss with parsley and salt.

  3. Season the pork, then dredge in flour, dip in the beaten egg and lightly coat in breadcrumbs without pressing.

  4. Heat the remaining oil to 350 F in a wide skillet. Fry the schnitzels 2 to 3 minutes per side, swirling the pan so the oil washes over the top and the crust puffs.

  5. Drain briefly and plate with the potatoes, the green sauce and the halved boiled egg on top.
