Pork Skewers with Peppers, Scallions and Mushrooms
Cubes of soy and honey marinated pork shoulder alternate with sweet bell pepper, thick scallion pieces, button mushrooms and cherry tomatoes, grilled until lightly charred and glistening. Served on a long white platter with extra sliced pork, they are colorful, easy party food for a summer evening.

Method 5 steps

Whisk the soy sauce, honey, olive oil and garlic. Toss with the pork and marinate for 1 to 4 hours in the fridge.

Thread the pork onto the skewers, alternating with pepper squares, scallion pieces and mushrooms, and finish each with a cherry tomato.

Heat a grill or grill pan to medium-high, about 425 F, and oil the grates.

Grill the skewers for 10 to 12 minutes, turning every 3 minutes and brushing with leftover marinade during the first half, until the pork is charred at the edges and 145 F inside.

Rest for 3 minutes and arrange on a platter.
