Smoky Paprika Chicken and Broccoli Rice Skillet

A one-pan lunch built for busy weeks: paprika-rubbed chicken chunks sear until crusty, then toss with nutty rice and bright broccoli florets that steam right in the pan. Each grain picks up the smoky spice and savory browned bits. It packs neatly for tomorrow, too.

Method 5 steps

  1. Toss the chicken with paprika, garlic powder, cumin, 1/2 tsp salt and 1 tbsp olive oil.

  2. Heat the remaining oil in a nonstick skillet over medium-high heat. Spread the chicken in one layer and sear 3 minutes without moving, then turn and cook 3 minutes until browned and cooked through.

  3. Add the broccoli and water, cover and steam 2 minutes until the florets turn bright green.

  4. Uncover, add the rice and soy sauce and toss for 3 to 4 minutes until the rice is hot and lightly toasted.

  5. Season with pepper and serve straight from the skillet.
