Poached White Fish in Coconut Curry with Black Rice

A thick fillet of cod or halibut rests in a fragrant golden coconut curry broth, surrounded by nutty black rice, snappy green beans, broccoli, carrot, turnip and peas. The sauce is gently spiced rather than fiery, so the sweet fish shines. It is a nourishing, colorful bowl for chilly evenings.

Method 6 steps

  1. Simmer the black rice in plenty of salted water for 30 to 35 minutes until tender but still chewy, then drain.

  2. Meanwhile, fry the curry paste in the oil in a wide saucepan over medium heat for 1 minute until fragrant. Whisk in the coconut milk, stock, fish sauce and sugar and simmer 5 minutes.

  3. Add the carrot and turnip and simmer 8 minutes, then add the green beans, broccoli and peas and cook 3 minutes more until crisp-tender.

  4. Season the fish, lower it into the barely simmering sauce, cover and poach 6 to 8 minutes until opaque and just flaking.

  5. Stir the lime juice into the sauce and taste for salt.

  6. Spoon rice into shallow bowls, ladle vegetables and curry around it and set the fish on top.
