Mushroom and Salami Thin-Crust Pizza

Broad slices of peppery salami and sliced button mushrooms bake over a thin, golden crust with melted mozzarella that bubbles into the gaps. A scatter of fresh thyme brings an earthy aroma that pairs beautifully with the mushrooms. Quick to assemble with store-bought dough for a satisfying weeknight supper.

Method 6 steps

  1. Preheat the oven to 500 F with a baking steel or inverted sheet pan on the top-middle rack.

  2. Toss the mushroom slices with olive oil and a pinch of salt.

  3. Stretch the dough thin into a 13-inch round on parchment and spread the sauce to the edge, leaving a very narrow rim.

  4. Sprinkle over the mozzarella, lay the salami slices flat, then tuck the mushrooms between them.

  5. Slide the pizza with its parchment onto the hot steel and bake 10 to 12 minutes, until the edges are golden and the mushrooms look glossy and tender.

  6. Scatter thyme leaves over the top and cut into wedges.
