Loaded Weekend Fry-Up with Hash Browns and Beans
Everything you crave on a slow Saturday on one platter: two sunny fried eggs, crisp shredded hash browns, saucy baked beans, buttery mushrooms, garlicky spinach, a blistered roasted tomato, seared breakfast sausage slices and crusty toasted baguette. The trick is smart timing so every component arrives hot at the same moment.

Method 6 steps

Heat the oven to 400 F. Squeeze the grated potato hard in a clean towel to remove moisture, then season with salt and pepper.

Heat 2 tablespoons of oil in a large skillet over medium-high heat. Press the potato into 4 thin patties and fry 5 to 6 minutes per side until deep golden and crisp. Keep warm in the oven with the tomato halves, cut side up and seasoned, roasting for 15 minutes.

Melt 1 tablespoon of butter in another pan over medium-high heat and cook the mushrooms without stirring for 3 minutes, then stir and cook 3 minutes more until browned. Move to a bowl.

In the same pan, melt the remaining butter with the garlic, add the spinach and toss for 1 minute until just wilted. Warm the beans in a small saucepan over low heat.

Sear the sausage slices in a dry skillet for 2 minutes per side and toast the baguette in the oven for 5 minutes.

Fry the eggs in the remaining oil over medium heat for 3 minutes until the whites set and the yolks stay runny. Arrange everything on warm plates, with beans, mushrooms and spinach in small dishes if you like.
