Lemongrass Hot and Sour Shrimp Soup with Greens

Bring the stock to a boil with the lemongrass, galangal and chilies, then simmer 8 minutes to infuse.

Add the onion and tomatoes and simmer 3 minutes until the tomato skins start to loosen.

Add the shrimp and cook 2 minutes, then stir in the greens and scallions and cook 1 minute until just wilted.
