Lemongrass Hot and Sour Shrimp Soup with Greens

Lighter than the creamy version, this clear tom yum-style broth is sharp with lime, fragrant with lemongrass and galangal, and loaded with shrimp, tomato, onion and wilted greens. Fresh chilies bring a clean heat. It is a lively, low-effort dinner that clears the head on a damp day.

Method 5 steps

  1. Bring the stock to a boil with the lemongrass, galangal and chilies, then simmer 8 minutes to infuse.

  2. Add the onion and tomatoes and simmer 3 minutes until the tomato skins start to loosen.

  3. Add the shrimp and cook 2 minutes, then stir in the greens and scallions and cook 1 minute until just wilted.

  4. Turn off the heat, stir in the fish sauce and lime juice, and taste for a bold sour-salty balance.

  5. Ladle into a large bowl and serve with extra lime halves and chilies on the side.
