Layered Baklava Squares under Pistachio Snow
Dozens of paper-thin phyllo sheets brushed with butter bake into shattering, honey-gold squares packed with a walnut and pistachio filling. The tops disappear under a heap of finely ground bright green pistachios that look like fresh snow. Rich, fragrant and even better the day after baking.

Method 6 steps

Make the syrup by simmering the sugar, water, honey and lemon juice for 8 minutes, then cool completely.

Pulse 1 1/4 cups pistachios with the walnuts, 2 tbsp sugar and cinnamon until coarsely ground. Grind the remaining 3/4 cup pistachios to a fine green powder and set aside for the top.

Heat the oven to 325 F. Brush a 9x13-inch pan with butter and layer 10 phyllo sheets, brushing each one generously.

Spread half the nut filling, add 6 buttered sheets, spread the remaining filling and finish with 10 more buttered sheets.

Cut into squares all the way through with a sharp knife, then bake for 50 to 55 minutes until deep golden and crisp.

Pour the cool syrup over the hot baklava, let it soak uncovered for at least 4 hours, then pile the fine pistachio powder over each square before serving.
