Honey Limeade with Lime Wheels

Sharper and more aromatic than lemonade, this limeade uses fresh lime juice sweetened with a light honey syrup and floats thin lime wheels right in the glass. It is tangy, golden and thirst-quenching, with a gentle floral sweetness from the honey. A perfect partner for grilled food and spicy dishes.

Method 5 steps

  1. Stir the honey into the hot water in a small saucepan over low heat for 2 to 3 minutes until fully dissolved, then cool.

  2. Roll the limes on the counter, halve them and squeeze out the juice, straining out any seeds.

  3. Combine the honey syrup, lime juice, salt and cold water in a pitcher and stir well; taste and add more water if it is too sharp.

  4. Add half the lime wheels to the pitcher and chill for 20 minutes so they infuse gently.

  5. Fill tall glasses with ice, slide a couple of fresh lime wheels down the side of each glass and pour in the limeade.
