Carrot Orange Juice with Fresh Mint
Sweet carrots and juicy oranges blend into a vivid sunset-orange juice with a gentle earthy backbone. A knob of ginger adds warmth and a sprig of mint brings a cool finish. It is a nourishing breakfast glass that tastes more like a treat than a health drink.

-
If using a juicer, feed through the carrots, peeled oranges and ginger, then stir in the lemon juice and skip the water.
-
If using a blender, blend the carrots, oranges, ginger and cold water on high for 60 to 90 seconds until completely smooth.
-
Pour the blended mixture through a fine sieve or nut milk bag, pressing firmly to extract all the juice, then stir in the lemon juice.
-
Fill tall glasses with ice and pour in the juice, leaving a little foam on top.
-
Slap each mint sprig lightly to release its aroma, tuck it into the glass and serve with the halved orange alongside.
