Herb-Crumbed Cod with Minted Pea Puree

A thick white fish fillet, such as cod or halibut, bakes under a buttery crust of breadcrumbs, parsley and lemon zest until it flakes into pearly layers. Vivid minted pea puree, tender pea shoots and cool cucumber ribbons keep the plate spring-fresh. Elegant enough for guests but calm enough for a weeknight.

Method 6 steps

  1. Heat the oven to 400 F and line a baking sheet with parchment.

  2. Mix the panko, melted butter, parsley, lemon zest and a pinch of salt until it clumps like wet sand.

  3. Season the fish, set it on the sheet and press the crumb mixture firmly over the tops. Bake 14 to 16 minutes until the crust is golden and the flesh flakes and reads 140 F in the center.

  4. Meanwhile, simmer the peas in salted water for 3 minutes, drain, then blend with the mint, olive oil and 2 tablespoons water until very smooth. Season with salt and pepper.

  5. Swoosh a spoonful of puree across each plate and sprinkle it with black sesame seeds.

  6. Set the fish beside the puree, drape the cucumber ribbons alongside and finish with a tangle of pea shoots.
