Garlic Herb Grilled Pork Rib Chops

Bone-in rib chops soak up a garlicky marinade of oregano, thyme and paprika, then hit a hot charcoal grill until golden with smoky char marks. They stay tender and juicy thanks to a quick brine, making them a dependable weeknight grill hero for a crowd.

Method 5 steps

  1. Dissolve the salt in the water and submerge the chops for 30 minutes to 1 hour. Rinse and pat very dry.

  2. Mix the olive oil, garlic, oregano, thyme, paprika and pepper, and rub it all over the chops.

  3. Heat a charcoal grill to medium-high, about 450 F, and oil the grates.

  4. Grill the chops for 4 to 5 minutes per side, rotating once for crosshatch marks, until the thickest part reaches 145 F.

  5. Rest for 5 minutes and serve with lemon wedges for squeezing.
