Fried Eggs in Salsa Verde with Queso Fresco

Broil the tomatillos, jalapeno, onion and garlic on a sheet pan 4 inches from the heat for 6 to 8 minutes, turning once, until blistered and soft.

Blend the charred vegetables with the cilantro and a pinch of salt until mostly smooth. Simmer the salsa in a small pan for 5 minutes to deepen the flavor.

Heat the oil in a nonstick skillet over medium heat. Fry the eggs for 3 minutes, until the whites are set and the yolks remain runny. Season with salt.

Spoon the warm red chile sauce into shallow plates, then ladle salsa verde into the center.
