Fried Eggs in Salsa Verde with Queso Fresco

Two sunny eggs float on a tangy roasted tomatillo salsa verde, framed by a ribbon of smoky red chile sauce. Salty crumbled queso fresco, creamy avocado slices and a sprig of cilantro finish this bright Mexican-style plate. Serve with warm corn tortillas for mopping and a glass of fresh juice for a vibrant morning.

Method 5 steps

  1. Broil the tomatillos, jalapeno, onion and garlic on a sheet pan 4 inches from the heat for 6 to 8 minutes, turning once, until blistered and soft.

  2. Blend the charred vegetables with the cilantro and a pinch of salt until mostly smooth. Simmer the salsa in a small pan for 5 minutes to deepen the flavor.

  3. Heat the oil in a nonstick skillet over medium heat. Fry the eggs for 3 minutes, until the whites are set and the yolks remain runny. Season with salt.

  4. Spoon the warm red chile sauce into shallow plates, then ladle salsa verde into the center.

  5. Slide two eggs onto each plate, scatter queso fresco over and around them, fan the avocado slices between the eggs and add a cilantro sprig.
