Puffed Dutch Baby with Blueberry Compote
Also called a German pancake, this dramatic oven pancake climbs the sides of a scorching skillet, forming crisp, golden walls around a soft, eggy, custard-like center. A snowy dusting of powdered sugar and a bowl of warm blueberry compote make it brunch-ready. It needs only a blender and a hot oven.

-
Place a 10-inch cast iron skillet in the oven and heat to 425 F for at least 15 minutes.
-
Blend the eggs, milk, flour, sugar, vanilla and salt for 30 seconds until frothy and smooth.
-
Simmer the blueberries, sugar and lemon juice in a small saucepan over medium heat for 8 to 10 minutes, until the berries burst and the sauce coats a spoon.
-
Carefully remove the hot skillet, add the butter and swirl until melted and foaming. Pour in the batter all at once and return to the oven immediately.
-
Bake 18 to 20 minutes without opening the door, until the edges are puffed high and deep golden. Dust with powdered sugar and serve at once with the warm compote.
