Puffed Dutch Baby with Blueberry Compote

Also called a German pancake, this dramatic oven pancake climbs the sides of a scorching skillet, forming crisp, golden walls around a soft, eggy, custard-like center. A snowy dusting of powdered sugar and a bowl of warm blueberry compote make it brunch-ready. It needs only a blender and a hot oven.

Method 5 steps

  1. Place a 10-inch cast iron skillet in the oven and heat to 425 F for at least 15 minutes.

  2. Blend the eggs, milk, flour, sugar, vanilla and salt for 30 seconds until frothy and smooth.

  3. Simmer the blueberries, sugar and lemon juice in a small saucepan over medium heat for 8 to 10 minutes, until the berries burst and the sauce coats a spoon.

  4. Carefully remove the hot skillet, add the butter and swirl until melted and foaming. Pour in the batter all at once and return to the oven immediately.

  5. Bake 18 to 20 minutes without opening the door, until the edges are puffed high and deep golden. Dust with powdered sugar and serve at once with the warm compote.
