Foil-Wrapped Falafel Pita Rolls
Warm lavash is rolled tight around crushed falafel, crunchy lettuce, juicy tomato and bright pink pickled turnips, then wrapped in foil so it holds together to the last bite. A cup of garlic sauce and another of tahini on the side make this street food favorite easy to recreate at home.

Method 5 steps

Stir the yogurt, garlic, lemon juice and a pinch of salt into a quick garlic sauce.

Warm each flatbread in a dry skillet over medium heat for 30 seconds per side until soft and pliable.

Spread tahini sauce down the center of each bread, then layer lettuce, tomato slices, pickled turnips and the crushed falafel.

Fold in the sides and roll up tightly from the bottom into a firm cylinder.

Wrap the lower two thirds of each roll snugly in foil, cut in half on a diagonal and serve with the garlic sauce and extra tahini for dipping.
