Charred Paneer Tikka Skewers with Yellow Peppers
Thick paneer cubes marinated in spiced yogurt pick up smoky char marks on the grill alongside sweet yellow pepper. Served with a tangy tomato chili dip and sliced red onion, these skewers make a vibrant main with naan or a crowd-pleasing centerpiece for a backyard cookout.

-
Stir the yogurt, ginger-garlic paste, garam masala, cumin, turmeric, lemon juice, oil and salt into a thick marinade.
-
Fold in the paneer and pepper pieces gently so the cubes do not break, then marinate for at least 20 minutes.
-
Thread paneer and pepper alternately onto the soaked skewers, leaving a little space between pieces.
-
Heat a grill or grill pan to about 450 F and oil the grates well.
-
Grill the skewers for 10 to 12 minutes, turning every 3 minutes, until the paneer shows dark char lines and the peppers soften at the edges.
-
Serve hot with the tomato chili sauce and sliced red onion on the side.
