Charred Paneer Tikka Skewers with Yellow Peppers

Thick paneer cubes marinated in spiced yogurt pick up smoky char marks on the grill alongside sweet yellow pepper. Served with a tangy tomato chili dip and sliced red onion, these skewers make a vibrant main with naan or a crowd-pleasing centerpiece for a backyard cookout.

Method 6 steps

  1. Stir the yogurt, ginger-garlic paste, garam masala, cumin, turmeric, lemon juice, oil and salt into a thick marinade.

  2. Fold in the paneer and pepper pieces gently so the cubes do not break, then marinate for at least 20 minutes.

  3. Thread paneer and pepper alternately onto the soaked skewers, leaving a little space between pieces.

  4. Heat a grill or grill pan to about 450 F and oil the grates well.

  5. Grill the skewers for 10 to 12 minutes, turning every 3 minutes, until the paneer shows dark char lines and the peppers soften at the edges.

  6. Serve hot with the tomato chili sauce and sliced red onion on the side.
