Crispy Veggie Patty Burger with Cheddar and Fries

A crunchy panko-coated chickpea and vegetable patty meets melting cheddar, frilly red leaf lettuce and a punchy sriracha mayo on a soft sesame bun. With a basket of golden fries and ketchup on the side, it is a hearty burger night that nobody at the table will miss meat for.

Method 6 steps

  1. Bake the fries according to the package, usually about 25 minutes at 425 F, until crisp.

  2. Mash the chickpeas roughly with a fork, then mix in carrot, peas, egg, 1/2 cup panko, paprika and a good pinch of salt. Shape into four 1-inch-thick patties and chill for 10 minutes.

  3. Press the patties into the remaining panko on both sides.

  4. Fry in oil in a skillet over medium heat for 4 to 5 minutes per side until deep golden and hot through. Lay a cheddar slice on each for the last minute and cover so it melts.

  5. Stir mayonnaise and sriracha together.

  6. Layer each bun with lettuce, patty and a spoonful of sriracha mayo so it drips over the cheese, cap with the top bun and serve with fries and ketchup.
