Sift the matcha into a small bowl, add the warm water and whisk briskly with a bamboo whisk in an M shape for about 30 seconds, until no lumps remain and a fine foam forms.

Whisk in the simple syrup and the pinch of salt, which softens any bitterness.

Fill a tumbler with ice and pour in the cold milk, leaving about an inch of space at the top.

Slowly pour the whisked matcha over the milk so it drifts down in green ribbons.
