Bittersweet Negroni over a Big Ice Cube
Equal parts gin, sweet vermouth and red bitter aperitivo stirred into a ruby drink that is bitter, herbal and gently sweet all at once. A single large cube keeps dilution slow, and a twist of orange peel adds a fragrant spray of oil across the surface. A classic pre-dinner sipper.

Method 6 steps

Chill a heavy rocks glass in the freezer for 10 minutes and place the large ice cube in it.

Pour the gin, vermouth and bitter aperitivo into a mixing glass and fill it two thirds with ice cubes.

Stir with a bar spoon for 25 to 30 seconds, until the outside of the mixing glass feels very cold and frosty.

Strain the drink over the large cube in the rocks glass.

Hold the orange peel skin side down over the glass and pinch it firmly to spray its oils onto the drink.

Curl the peel and hook it over the rim, then serve right away.
