Char-Grilled Salmon with Zucchini and Herb Yogurt

Salmon picks up smoky char lines on a hot grill, served with thick rounds of grilled zucchini, a caramelized lemon half and fresh basil. A gravy boat of garlicky dill yogurt sauce cools everything down. Light, summery and ready in 25 minutes, it pairs perfectly with a crisp glass of something cold.

Method 6 steps

  1. Stir the yogurt, dill, garlic, a squeeze of lemon and a pinch of salt together and pour into a small sauce boat.

  2. Heat a grill or grill pan over medium-high heat and oil the grates well.

  3. Brush the zucchini with olive oil, season and grill 3 minutes per side until soft with dark grill marks. Grill the lemon half cut-side down for 3 minutes until caramelized.

  4. Rub the salmon with the remaining oil and season. Grill flesh-side down for 3 minutes, then flip and cook skin-side down 3 to 4 minutes until the center is just opaque.

  5. Plate the salmon with the zucchini overlapping beside it, the grilled lemon and a sprig of basil.

  6. Serve with the herb yogurt sauce.
