Method 5 steps

Brew the espresso and stir in the simple syrup while it is hot so it dissolves completely.

Pour the sweetened espresso into a small jug and chill it in the freezer for 5 minutes, or stir it over a few ice cubes, so it does not melt all the ice in the glass.

Fill a tall glass with ice and pour in the cold milk, stirred with the cream if using, until it reaches about two thirds of the way up.

Slowly pour the espresso over the back of a spoon held against the ice so it floats and forms a darker layer on top.
