Southern Fried Chicken Breast with Fries and Roll

A buttermilk bath and a well-seasoned flour dredge give this bone-in breast quarter a rugged, crackling crust and juicy meat right down to the wing. Paired with salty golden fries and a pillowy dinner roll, it is a diner plate done right, simple, generous and deeply satisfying.

Method 6 steps

  1. Mix the buttermilk, hot sauce and 1 tsp salt. Submerge the chicken and refrigerate 4 hours or overnight.

  2. Whisk the flour with paprika, garlic powder, cayenne, 2 tsp salt and 1 tsp pepper. Drizzle in 2 tbsp buttermilk and rub to form shaggy bits.

  3. Lift the chicken, let excess drip off, and press firmly into the flour, turning to build a thick coat. Rest on a rack 10 minutes.

  4. Heat the oil in a deep pot to 325 F. Fry the chicken 16 to 18 minutes, turning occasionally, until mahogany and 160 F in the thickest part.

  5. Drain on a rack. Raise the oil to 375 F and fry the fries for 4 to 5 minutes until golden, then salt.

  6. Serve each piece with a heap of fries and a warm roll.
