Silver Dollar Pancakes with Honey and Fresh Berries
Little palm-sized pancakes, thick and custardy inside, piled with halved strawberries and plump blueberries, then finished with a thread of golden honey. Ricotta in the batter keeps them moist and slightly creamy. They cook in minutes, so they suit busy mornings as well as relaxed brunches.

Combine the flour, sugar, baking powder and salt in a bowl. Whisk the ricotta, milk, egg and melted butter in another bowl until mostly smooth.

Stir the ricotta mixture into the dry ingredients until just combined; the batter should be thick and hold its shape on a spoon.

Warm a nonstick skillet over medium-low heat and add a small knob of butter. Drop 2 tablespoons of batter per pancake, spacing them apart.

Cook for about 2 minutes until the bottoms are golden and the edges look matte, then flip and cook 1 1/2 minutes more until puffed and cooked through.

Arrange 3 or 4 pancakes per plate, pile on the strawberries and blueberries, and drizzle with honey just before serving.
