Silver Dollar Pancakes with Honey and Fresh Berries

Little palm-sized pancakes, thick and custardy inside, piled with halved strawberries and plump blueberries, then finished with a thread of golden honey. Ricotta in the batter keeps them moist and slightly creamy. They cook in minutes, so they suit busy mornings as well as relaxed brunches.

Method 5 steps

  1. Combine the flour, sugar, baking powder and salt in a bowl. Whisk the ricotta, milk, egg and melted butter in another bowl until mostly smooth.

  2. Stir the ricotta mixture into the dry ingredients until just combined; the batter should be thick and hold its shape on a spoon.

  3. Warm a nonstick skillet over medium-low heat and add a small knob of butter. Drop 2 tablespoons of batter per pancake, spacing them apart.

  4. Cook for about 2 minutes until the bottoms are golden and the edges look matte, then flip and cook 1 1/2 minutes more until puffed and cooked through.

  5. Arrange 3 or 4 pancakes per plate, pile on the strawberries and blueberries, and drizzle with honey just before serving.
