Silky Olive Oil Mashed Potatoes with Scallions

Golden potatoes are riced and beaten with warm milk and fruity extra virgin olive oil instead of heaps of butter, giving a lighter, peppery mash with a velvety texture. A pool of oil in the center and a pinch of sliced scallions make it look as good as it tastes.

Method 5 steps

  1. Cover the potatoes and garlic clove with cold salted water, bring to a boil and simmer 15 to 18 minutes until a knife slides through with no resistance.

  2. Drain well and return to the hot pot over low heat for 1 minute to evaporate excess moisture.

  3. Pass the potatoes and garlic through a ricer or mash until no lumps remain.

  4. Beat in the warm milk a little at a time with a wooden spoon, then drizzle in 1/4 cup olive oil while stirring until creamy and glossy. Season with salt and white pepper.

  5. Spoon into a bowl, swirl the top with the back of a spoon, pour the remaining oil into the center and scatter the scallions on top.
