Salami, Olive and Mozzarella Party Skewers

Two kinds of bite-size skewers fill this platter: folded salami with green olives and cheese cubes, and soft mozzarella rounds topped with basil and tiny sweet red peppers. Colorful and make-ahead friendly, they are exactly what you want on a buffet table next to a glass of prosecco.

Method 6 steps

  1. Pat the mozzarella and peppers dry with paper towels so the skewers stay neat.

  2. For the olive skewers, thread a green olive, a salami slice folded into quarters and a cheese cube onto each pick.

  3. For the pepper skewers, stack a basil leaf and a red drop pepper on a mozzarella round and pierce straight down to hold them in place.

  4. For the remaining picks, wrap a salami slice loosely around a small mozzarella ball and secure with a skewer.

  5. Arrange the pepper and mozzarella stacks in the center of a white platter and ring them with the salami skewers.

  6. Brush the mozzarella lightly with olive oil, cover and chill up to 4 hours, then serve slightly cool.
